If you’ve ever purchased a package of seemingly lean bacon only to be surprised at its fattyness when you open it at home, you are not alone. In fact, the way bacon is packaged is actually mandated by the government. It’s the topic of an article by Paul Lukas on Bloomberg called, “Why Supermarket Bacon Hides its Glorious Fat.”
